The best buttermilk pancake recipe
Just seven simple ingredients, and your favourite toppings to serve.
To make about 12 pancakes you’ll need a frying pan, some sunflower oil, and the following ingredients.
150g plain flour
2 tsp baking powder
¼ tsp bicarbonate of soda
50g caster sugar
150ml buttermilk
25g melted butter (cooled)
2 eggs
How to make your pancakes
It couldn’t be more simple. Measure and sieve the dry ingredients into a large bowl. Whisk the wet ingredients together in a separate bowl, and add them to the dry mix, stirring continuously.
Fry your pancakes straight away on a medium heat if you have a leisurely morning planned. Alternatively, complete all the preparation steps the night before and pop everything into the fridge ready for a speedy breakfast in the morning.
Breakfast pancakes in less than 10 minutes
With a little preparation the night before, you’re all set to produce a speedy breakfast.
You’ve prepared your batter the night before and stored it overnight in a sealed container in the fridge. We used the set of four ridged melamine bowls with lids from dotcomgiftshop as a mixing bowl and storage containers for our batter and sliced fruit.
All you need to do when you wake up is heat your pan and spend a few minutes frying each pancake. And voila! Fresh, warm breakfast pancakes in the same time as it takes to make toast!
