Sensational summer dining

We’ve taken inspiration from our wonderful foodie bloggers for some serious summer dining. They’ve added some delicious recipes you can try for yourself at home.

Easy summer main

First up, we have a starter and main from @lucylovesya.
Lucy has made full use of our range, from our side plates to our dinner plates, small bowls for snacks, salad, main and dessert bowls.
We thought her tasty and easy starter and main is just the right amount of food to enjoy during the heat but also the quickest to prepare, all the flavour without the fuss.

INGREDIENTS:
2 cans of chopped tinned tomatoes.
1/4 cup of olive oil.
few pinches of fresh mint.
1 onion finely chopped.
1 garlic clove – crushed. (optional  – nice without but some people love garlic in any pastas sauce )
1/4 cup mozzarella.
black pepper.
Salt.
Pasta of your choice.

METHOD:
Add the oil to a saucepan and heat on a flame or hob. Put in the onion and garlic and gently fry until golden. Add the tinned tomatoes and mozzarella and mix in well. Stir until it is has thickened and then add a pinch of salt and as much pepper as you personally like to use.
 Let it cool for a few minutes and then add a little chopped mint and the mozzarella. Mix it all together and finally add a sprig of mint on top to finish it off.
Mix the sauce into cooked pasta and enjoy.

Wholeheartedly healthy dessert

Next up we have the choice of two puddings from @wholeheartedlyhealthy.
Laura is passionate about making wonderful foods with health benefits.
If you’re one for a big after-dinner indulgence then look no further as Laura’s delicious treats are full of flavour which taste as though they should be a little naughty.
For a little after-dinner refresher, we have Laura’s wonderful homemade Mango, Lime and Coconut frozen yogurt. See her no frills recipe below.

INGREDIENTS:
2 cups / approx 150 g chopped frozen mango
1/2 cup / 125 mls coconut yoghurt / plain yoghurt
1 lime
2 tablespoons desiccated coconut

METHOD: 
Add the coconut to a pan over a high heat and toast while stirring constantly until golden brown. Set aside.
Grate the lime and set aside the zest, juice the lime and add to a blender or food processor.
Add the frozen mango and yoghurt to the blender or processor and blitz, stopping to scrape the sides as needed, until smooth, thick and creamy.
Serve immediately topped with the lime zest and toasted coconut.
